The colder weather and the holiday season rush didn’t stop restauranteurs from opening new concepts at the end of 2023.

José Andrés is back in Miami after closing Bazaar in the spring — this time with Zaytinya, his popular Mediterranean concept with locations in Washington, D.C. and New York. Emeril Lagasse, meanwhile, has expanded his New Orleans empire with a brasserie at Harrah’s.

In Houston, Kata Robata chef, Manabu “Hori” Horiuchi, has added a new concept: sushi and wagyu restaurant, Katami. Down on the coast, The Fancy has opened at Galveston’s Hotel Lucine, serving “fine-ish” French-American fare. Over in South Carolina, chef Jason Stanhope is running multiple concepts at the new Pinch Hotel, including Lowland, a two-story Southern-inspired restaurant.
