Spirulina is gaining in popularity on restaurant menus as consumers seek nutrient-dense, plant-based ingredients that offer both health and sustainability benefits, as well as visual appeal. High in protein, antioxidants, and essential vitamins, spirulina, which is a type of blue-green algae, aligns with wellness trends and plant-forward diets such as veganism and vegetarianism.
On top of that, spirulina’s vibrant blue-green color makes it a standout ingredient for visually appealing, Instagram-worthy dishes and beverages, something that is increasingly important as social media continues to drive a lot of consumer interaction. The ingredient is most popular in smoothies.
Over the past four years, spirulina has grown on restaurant menus by 33%, and market research firm Datassential’s Menucast prediction tool forecasts growth of another 35% in the next four years.
Unsurprisingly, consumer awareness is highest among vegetarians and vegans.
