Southwest Sausage Breakfast Wraps

Yield: 4 servings.

2 Tbsp. butter 6 large eggs
8 Jones All Natural Golden Brown fully cooked sausage links, cut into 1/2" pieces
1⁄3 cup salsa or picante sauce
4 flour tortillas (6-8"), warmed
1 cup Cheddar cheese, shredded
2 Tbsp. cilantro, chopped (optional)

Melt butter in large skillet over medium heat. Beat together eggs, sausage and salsa. Pour mixture into hot skillet. cook, stirring frequently, until eggs are desired consistency. Spoon mixture onto warm tortillas; top with cheese and cilantro, if desired. Wrap up burrito-style and serve.
