INGREDIENTS:8 lb. water
1 lb., 8 oz. yeast
1 lb., 4 oz. sugar
6 oz. salt
8 oz. all-purpose shortening
8 oz. oil
2 lbs. whole eggs
20 lbs. bread flour
8 lbs. raisins
6 lbs. walnut piecesDIRECTIONS:Combine all ingredients except raisins and walnuts. Develop dough well. Proof to double in volume. Add walnuts and raisins. Incorporate. Scale 1 lb., 8 oz. pieces for 1 lb. loaf pans. Make up. Proof and bake at 390°F for 30 minutes.SERVINGS:32 loavesFrom:California raising marketing board
