INGREDIENTS:1 can Genova® Tonno, Solid Yellowfin Tuna with Olive Oil (3 oz.), drained and oil reserved
4 oz. mixed greens
1 Tbsp. capers
1 Tbsp. black olives, chopped
1 Tbsp. tomatoes, chopped
1 Tbsp. red onions, chopped
2 Tbsp. red wine vinegar
2 pita breads, cut into 3 inch circles
4 slices tomato DIRECTIONS:Drain oil from tuna into bowl and reserve. Mix capers, olives, tomatoes and red onions with tuna. Add vinegar and mixed greens to tuna oil and toss. Line plate with mixed greens. Alternate layers of tuna mixture, sliced tomatoes and pita in cylinder and compact. Remove cylinder. Suggested garnish: Parmesan crisps.
