Lobster and Avocado Louis on Brioche

Yield: 8 miniature sandwiches

1 1 /2 tsp. Maille Old Style Whole Grain mustard
1 Tbsp. mayonnaise
3 Tbsp. seeded and diced tomato
1 /4 tsp. fresh lemon juice
to taste, salt and pepper
6 oz. lobster meat, roughly chopped
as needed, cornichons
2 slices brioche
1 avocado, cut into 8 slices

Combine whole grain mustard, mayonnaise, tomato, cornichons (if desired for adding crunch and flavor), lemon juice, and salt and pepper in a small bowl. Stir well to make Louis sauce.

Toast slices of brioche, then quarter each slice. On each of the eight pieces of brioche, top with a slice of avocado, lobster meat and Louis sauce.
