Yield: 3 1/2 cups.

10 oz. cabbage, chopped
1 cup black beans, drained, rinsed
1cup corn kernels, thawed
1/4 red onion, diced
1 Tbsp. red bell peppers
1 Tbsp. green bell pepper, diced
1 Tbsp. jalapeño pepper, minced
1 1/2 tsp. cumin seed
1 California Avocado, diced
1/2 cup California Avocado Ranch Dressing (recipe follows)

CALIFORNIA RANCH AVOCADO DRESSING
2 California Avocados
3 1/2 cups Ranch Dressing, prepared
3/4 cup parsley, fresh chopped, packed

  1. For slaw: Mix together all ingredients except diced California Avocado and California Avocado Ranch Dressing.

  2. Dice avocado as needed. Add avocado and dressing to above. Stir to distribute and serve on line.

  3. For dressing: Dice 2 avocados. Pulse all ingredients in food processor until smooth, stopping to scrape down sides. Label, date and refrigerate.
