Mashed Potato:

1 Russet Idaho Potato

½ tsp. salt

1 tsp. wasabi

½ Tbsp. melted butter

Sushi fillings:

as needed, egg, cooked

as needed, asparagus, boiled

as needed, kanpyo (squash)

as needed, crab

as needed, sakura denbu (seafood, flaked)

Potato peel:

1 Russet Burbank Idaho potato, paper-thin ribbon (12" long), lightly boiled

1 sheet nori (seaweed)

Spread mashed potato on sheet of nori and add filling. Lift end of nori nearest you, and carefully roll it over the filling, pressing down as you go. Roll potato peel over nori and cut into 6 pieces.
