Belgian street waffles, or liege (pronounced “lee-edge”) are known for their special yeasty dough (not batter) and pearl sugar. Also growing in popularity are bubble street waffles from Hong Kong, which are appearing with an amazing array of toppings. The rise of both is proving waffles to be one of the hottest — and most versatile — trends that can work across multiple dayparts.

Here’s a look at six concepts with waffles at the core of the menu.
