We're not sure where Zimmer, a home-based writer from Calgary, got her coffee knowledge. Nor are we clear why Andrews McMeel, primarily an independent newspaper syndicate, wanted to publish it. But we're glad they did, because the author turns out to be a terrific explainer of all things coffee. She begins by laying out the pros and cons of each of the various methods of coffee making; then helps you decide which type of coffee to serve in your restaurant — perhaps even roasting it yourself. She offers recipes for more than 100 coffee drinks, many of them ideal for full-service restaurant bars. Inspiration, quality control and solid advice in one book. A bargain.
