Southeast Asian Salmon Sub with Chile-Lime Dressing

Yield: 4 sandwiches.

½ cup julienne carrots

½ cup julienne cucumbers

4 sesame seed hoagie buns, sliced

1 (7.1-oz.) pouch Chicken of the Sea® Premium Skinless & Boneless Pink Salmon, flaked

2 Tbsp. chopped roasted peanuts

1 Tbsp. chopped fresh mint

Chile-Lime Dressing:

1 large shallot, thinly sliced

3 Tbsp. fresh-squeezed lime juice

2 Tbsp. sugar

1½ Tbsp. Thai-style chile sauce

1 Tbsp. rice vinegar

1 Tbsp. sesame seed oil

2 tsp. lite soy sauce

For dressing: Mix all dressing ingredients together until well-blended.

For sandwich: In bowl, combine carrots and cucumber. Evenly divide among hoagie rolls. Top with Chicken of the Sea® Salmon, ½ Tbsp. peanuts and 1 tsp. mint. Drizzle Chile-Lime dressing over filling. Serve immediately.
