1¼ oz Sauza Tres Anejo Tequila
½ oz. Cointreau premium liqueur
2 oz. Dole raspberry chipotle puree (see below)
2 oz. fresh sour mix
Rim a 14 oz. glass with chili-lime salt and fill with ice. Combine ingredients in shaker with ice. Shake vigorously until well blended and chilled. Strain into a glass with ice and garnish with a lime wheel with a thin pepper slice skewered through the center.
Raspberry Chipotle Puree (Yield: 20 servings)
4 cups Dole frozen raspberries
2 tsp. Chipotle pepper, chopped
2 oz. fresh sour mix
5 oz. simple syrup
1 oz. raspberry vinegar
1 oz. Monin raspberry syrup
Blend combined ingredients in blender until completely smooth.
