Orange Juice Bubble Tea

BUBBLE BUBBLE: Orange Juice Bubble Tea is as eye-catching as it is refreshing.

Yield: 1 serving.

2 oz. cooked tapioca pearls (see below)

1 cup ice

1 oz. flavored syrup, optional

10 oz. Florida orange juice

Tapioca Pearls:

1 cup tapioca pearls

6-8 cups water

For tapioca pearls: The ratio should be a minimum of 7:1 water to tapioca pearls. Boil water in large pot and add tapioca pearls to boiling water. Pearls should float in the water. Boil with cover on for about 25 minutes, depending on tapioca pearls. Turn off heat and let tapioca sit in the water for an additional 25 minutes. Rinse cooked tapioca pearls in warm water and drain out water.

For bubble tea: Add cooked tapioca pearls to a clear cup or glass. Add flavored syrup over “bubbles.” Place ice over “bubbles.” Fill glass to top with Florida orange juice.
