INGREDIENTS:1 ½ lbs.yellow onions, diced
1 Tbsp.olive oil
2 lbs.ground turkey
3 ozs.low-sodium beef base
2 ½ lbs.eggplant, diced
7 ozs.carrots, diced
5 ozs.celery, diced
2 qts.tomatoes with juice, diced
½ tsp.nutmeg
½ tsp.black pepper
3 ½ qts.water
5 ozs.elbow pasta
½ cupscallions, sliced
1/3 cup lemon juiceDIRECTIONS:1. Sauté onion in oil until soft; add turkey and cook through.

2. Add base, eggplant, carrots, celery, tomatoes, nutmeg, pepper and water; simmer 30 minutes.
