Yield: 4 sandwiches.

1/4 cup low-fat sour cream
1 /4 cup mayonnaise
2 Tbsp. cream cheese
2 minced garlic cloves
1 diced green onion
10 diced green or black olives
1 lb. cooked, boneless chicken breasts, chopped
to taste, salt and pepper
4 slices cooked bacon
8 slices sourdough or whole wheat bread
as needed, fresh chopped herbs (such as chives or tarragon)
as needed, alfalfa sprouts
as needed, lettuce
as needed, slices of Jarlsberg cheese
as needed, sliced tomatoes

Mix together sour cream, mayonnaise, cream cheese, garlic cloves, green onion, olives, and chopped chicken. Add salt and pepper to taste. Divide salad evenly among four sandwiches, then layer bacon, herbs, sprouts, lettuce, Jarlsberg cheese slices and tomato slices on each.
