From: Head chef and certified maestro pizzaiolo Fabrizio Cercatore, Hot Italian, Emeryville, CA. Yield: 1 pizza.

as needed, pizza dough
5 oz. mozzarella cheese
2 oz. Gorgonzola cheese
3.8 oz. pears
1.5 oz. honey

Start with stretched pizza dough, approximately 13”. Apply the mozzarella, Gorgonzola and pears evenly atop the dough. Bake.  After pizza is done, slice into 8 equal pieces. Drizzle honey evenly over pizza.
