Grilled Pork Chops Stuffed with Cheese and Cortland Apples

4 pork chops, about 1¼ inches thick

2 Cortland apples, peeled and diced

½ cup diced onion

2 sprigs thyme, leaves stripped from stems and finely chopped

½ cup cubed Crave Brothers Farmstead Les Frères cheese

as needed, olive oil

to taste, salt and pepper

Preheat grill on high for about 10 minutes. Make a pocket in each chop by slicing almost through horizontally. In medium bowl, combine apples, onion, cheese and thyme leaves. Spoon apple stuffing into each chop. Brush each chop with olive oil, season with salt and pepper. Reduce grill heat to medium. Place chops in grill, cook 7-9 minutes on each side. Transfer chops to warmed serving platter and let rest for a minute or two. Serve immediately with wild rice or over a summer green salad.
