INGREDIENTS:1 cup fresh or filtered water ½ cup finely ground Chiapas Rich Vienna Roast or Classic French Roast coffee
2 Tbsp. olive oil
2½-3 lbs. sirloin beef tip, 1 in. thick, sliced in ½ in. pieces
1/3 cup flour mixed with 1 tsp. black pepper and 2 tsp. paprika
1 cup finely chopped red, yellow or orange bell pepper
1 cup finely chopped shallots
3 cups seasoned chicken, beef or vegetable broth DIRECTIONS:Bring 1 cup water to a boil. Add coffee and steep 10 minutes. Pour through fine mesh sieve or filter and reserve liquid. Heat oil in large stock pot. In bag, dredge meat with seasoned flour, coating pieces well. Cook in hot oil, turning occasionally, for 10 minutes or until brown. Add vegetables and saute 8 minutes. Add broth and reserved coffee; simmer on low heat, covered, until tender, about 1 hour. Serve over noodles, rice or potatoes.
