Chocolate Mascarpone Pie

Yield: 1 pie, 8 servings.

Crumb Crust:

½ Tbsp. butter

1 cup chocolate wafer cookie crumbs

3 Tbsp. sugar

¼ cup butter, melted

Filling:

16 ounces Crave Brothers Farmstead Classics Mascarpone

6 oz. semi-sweet chocolate, melted

2 Tbsp. Kahlua or Amaretto

as needed for garnish, whipped cream

Preheat oven to 325°F.

For crust: Butter a 9" pie pan with ½ Tbsp. butter. In a small bowl, add cookie crumbs, sugar and melted butter. Mix together. Press crumbs evenly into pan. Bake 6 minutes. Set aside to cool.

For filling: In a large bowl, add mascarpone and melted chocolate. Stir together until blended and no white streaks remain. Add Kahlua or Amaretto; stir. Immediately spread the filling in the cooled crust. Cover and refrigerate 1 hour. Serve with whipped cream.

Note: A ready-to-use chocolate crumb crust can be substituted.
