Cappuccino Rice Pudding Cups

Yield: 12 servings.

1½ qt. cooked long or medium grain rice

1 qt. milk

28 oz. sweetened condensed milk

2 Tbsp. instant coffee or espresso granules

1 tsp. ground cinnamon

3 cups whipped heavy cream

1½ cups shaved chocolate

In large, heavy saucepan combine rice, milk and sweetened condensed milk. Heat over medium-high heat, bringing just to a boil, stirring often. Reduce heat to medium and simmer 20 minutes, stirring often, until thickened. Remove from heat.

Stir in coffee granules and cinnamon; mix well. Cool slightly. Spoon ½ cup pudding into 12 espresso or coffee cups or mugs. Serve warm or at room temperaure, topped with whipped cream and shaved chocolate.
