International Waffle Day, inspired by the annual March 25 celebration in Sweden, is observed by—what else?—eating waffles. Big Eyed Fish in Houston will mark the date by offering its Chicken and Waffles with a choice of side dish for $13.75 throughout the weekend. Among the side dish choices: potatoes and onions, braised collard greens, crispy Brussels sprouts and more.

Elsewhere, on Easter Sunday, brunch menus are boasting creative waffle varieties as well. Ambar in Washington DC offers its prix fixe brunch ($39 per person) with a Poached Pear Waffle with House-Made Caramel Sauce. At La Sandia in McLean, VA, the a la carte selections ($8.95 to $15.95) include Mexican Chocolate Waffles with cajeta, fried plantains, whipped cream and strawberry sauce.

Chicken and waffle combos also continue to take on ethnic expressions, ranging from sandwiches to desserts. For example, at the newly opened Vandal in NYC—where global street food is served in an environment that showcases the work of street artists—the menu includes Chicken Katsu & Hong Kong Egg Waffles, served with braised collard greens. Other waffle ideas include the Peruvian Chicharron Waffle served at Tanta in Chicago ($16 on the brunch menu), featuring crispy panca honey-glazed pork belly with seasonal berry compote.
