What the Judges Said: Thanks to our friends in Mexico, fish tacos finally made their way to American restaurant tables not that long ago, relatively speaking. But for some reason, you don’t see fish being used that often in wraps. We’re not sure why, particularly after eating this blackened tilapia beauty. There’s nothing complicated here beyond the blackening of the fish, which gives it a nice punch of spicy flavor that is counterbalanced by the mango salsa. Easy-peasy. Sometimes the best things in life are the ones that are not overly complicated.
