Restaurant: Trummer’s on Main, Clifton, Va.

Creator: Stefan Trummer

Inspiration: “Being Austrian, Stefan has always used elderflower syrup and was enthralled with vodka made from grapes. Playing around with the pastry department, he wanted to incorporate sorbets into his cocktail. He asked his regulars to name the cocktail and they noted that the sorbet looked like an iceberg.”

Key Ingredients: Ciroc vodka, elderflower syrup, sparkling wine, muddled green grapes and Champagne sorbet

Price: $14

What the Judges Said: This drink is a beautifully balanced expression of green grapes in several forms — grape vodka, wine and actual grapes — with the elderflower syrup acting like a more genteel variety of sour mix. The magic here is in the sorbet, which slowly changes the flavor of the drink as it melts. No wonder it outsells all of the other cocktails at Trummer’s on Main combined.
