Category: Rum, Pisco and Cachaça

Restaurant: Old Fountain Tavern, Dacula, Ga.

Creator: Connor Jackson

Inspiration: “I have been on a pear kick lately, so I am always trying to come up with new cocktails that incorporate pear in some fashion. In the summer I couldn’t think of a better fruit than raspberry to mix with this pear cocktail.”

Key Ingredients: Pyrat Spiced Rum, Chambord, pear, mint, agave nectar, lime juice, soda and raspberries

Price: $9

What the Judges Said: Using a more robust rum and rounding it out with Chambord gives the always refreshing Mojito a bit more substance without taking away from its naturally playful character. Filling the highball with pear slices gives the drink a luscious aroma.
