2 lb. Certified Angus Beef® cooked brisket, sliced
2 cups sweet cherries, pitted and sliced in half
2 cups yellow tomato, seeded and chopped
1 cup sweet yellow onion, chopped
2 cups bell pepper, seeded and chopped
1 cup crushed pineapple, drained
4 Tbsp. cilantro, finely chopped
4 Tbsp. kosher salt
8 flour tortillas
8 slices Provolone cheese
2 cups fresh spinach leaves
For salsa: Combine cherries, tomato, onion, pepper, pineapple, cilantro and salt. Cover and chill.
For wraps: Warm tortillas and brisket slices. Place cheese, spinach and brisket in tortilla. Top with salsa.
