Alfred Portale
One thing you don't know about me is that I have an excellent top-spin on my forehand.
I'm most proud of my two amazing daughters, Olympia and Victoria.
One of my most memorable meals was at Alle Testiere in Venice.
If there were no extra virgin olive oil, I'd have no reason to live.
My go-to drink is white burgundy.
If I were on death row my last meal would be Peking duck.
The thing I hate most about this business is when customers bring unnecessary technology devices into the restaurant. We've seen everything from laptops to children watching movies on portable DVD players in the dining room.
If I could change one thing about me is that I'm too nice.
My idea of a perfect day is cooking 350 perfect meals at Gotham Bar & Grill, followed by a shellfish plateau and a great bottle of wine at Balthazar.
If I was not a restaurant operator, I'd love to be a musician.
Alfred Portale is the chef/owner of highly regarded Gotham Bar & Grill, which is celebrating its 25th anniversary in New York City. He has earned a total of four three-star reviews from The New York Times and was named the James Beard Foundation's Outstanding Chef in 2006. Several months back, Portale opened Gotham Steak in Miami's Fountainebleau Resort.
