The life of a pitmaster is a lonely one. Spending long, isolated hours tending a smoker throughout the night is a job that only one truly committed to the art of barbecue could love. John Lewis is one such man. In addition to helping open the legendary Franklin Barbecue in Austin, he oversaw the award-winning barbecue program at La Barbecue, also in Austin. When it comes to Texas-style barbecue, he’s one of the best in the business. 

But what has us champing at the bit is the highly anticipated opening next month of his first restaurant, Lewis Barbecue in Charleston, SC. It’s likely going to be a game-changer for this Southeast culinary mecca, which has a strong barbecue focus on whole hogs and sauces. Lewis, instead, will deliver a Texas-style barbecue experience, featuring counter service, country music and Lone Star beer. 

Lewis has even hired a designer who will create a very non-barbecue-type space, one created with comfort and style in mind. Think vintage furniture, wallpaper and artwork. We’re betting that Lewis Barbecue will be the hottest barbecue spot to open in 2016. We know it’s on a list of places we’re dying to try.
