Despite pandemic twists and turns and supply chain delays, new concepts are opening in Denver and focusing on the dine-in experience.

Will 2022 be the year of the brasserie in Denver? Only time will tell, but so far the answer appears to be ‘yes.’ New this year in the Mile High City is a French restaurant from a (French) chef from Los Angeles, along with a French-Canadian brasserie in the style of Montreal.

Locals Paul Reilly, of Beast + Bottle fame, brings a high-end dining spot to the Hyatt Centric Downtown; and Dana Rodriquez (Working Class and Super Mega Bien) brings her version of Mexican street food.

And, also from Los Angeles, comes a location of the acclaimed seafood concept Water Grill
