Fast-casual omakase restaurant Sushi on Jones and wagyu sandwich shop Don Wagyu combine to open in New York City’s Gotham West Market

The two concepts offer both menus at 10 seats, and grab-and-go boxes at a take-out window

Inside the Gotham West Food Hall in New York City, a new fast-casual omakase restaurant has opened. A partnership between restaurants Don Wagyu and Sushi on Jones, this dual-concept location with just 10 seats joins Seamore’s, dell’anima and Corner Bistro in the food hall.

Both Sushi on Jones and Don Wagyu are New York-based brands run by Uchū Hospitality group, the group behind Michelin-starred Uchū, but this is their first collaboration.

This collaboration is Sushi on Jones’ fourth location. The al fresco omakase bar is known for offering 12-piece tastings in 30 minutes for $58. It is Don Wagyu’s second location. The restaurant is known as the only one in New York that sells wagyu beef sandwiches, including the washugyu, the A5 miyazaki wagyu and the A5 Ozaki.

The new combined location will offer 7- and 12-course omakase menus and, when booking a reservation, guests have access to both the omakase menu and Don Wagyu’s menu.

A take-out window has grab-and-go boxes featuring a combination of Nigiri and Maki from Sushi on Jones, and the full menu from Don Wagyu. Guests can order out or take their food and sit anywhere in the market to eat.

Executive chef Crowin Kave, formerly of The Soho House, leads Don Wagyu with food items that include WagNuggets, six pieces of wagyu and free range chicken with housemade sauce options of tonkatsu, yuzu kosho ranch, or hot honey mustard; the house-made Wagyu Dog with crispy shallots and pickled mustard seed; and the Hot Wagyu featuring American Wagyu brined in buttermilk and togarashi, fried and topped with a spicy sauce of fermented chili, ginger and sansho pepper, and garnished with bread and butter pickles. For dessert, there is Whisky Pudding, a take on butterscotch pudding with Japanese whiskey, and topped with vanilla whip and almond cookie.

Alcohol is not available now but will be soon with the upcoming addition of beverage director Bill Wood, who will introduce a menu of sake, beer and wine.

“As we continue to expand into new neighborhoods, we are excited to join Gotham West Market in Hell’s Kitchen and work alongside so many talented chefs and food entrepreneurs,” said Derek Feldman, owner of Uchū Hospitality, in a company release. “At this location, we’ll serve a combination of our most popular menu items alongside new, creative options that will be exclusive to this location.”

Gotham Market West is a 10,000-square-foot food hall founded in 2013 and operated by Gotham Organization.
