Summer was a great time for diners, as new restaurants opened their doors across the country. And so far, fall is shaping up to be much the same, with new concepts from independent chefs and established groups opening their doors wide in September and October.

This new crop of openings includes two restaurants in Coral Gables, Fla., with Thomas Keller’s beloved Bouchon, a bistro serving French classics that’s expanding its footprint from Las Vegas and Yountville, Calif. There’s also Erba, a stunning new South Florida-meets-Florence concept from Alpareno Restaurant Group.

Over in Austin, chef Jo Chan has opened a French bistro of her own, dubbed Bureau de Poste, while Hai Hospitality continues its march forward with the opening of Uchiba, an izakaya restaurant serving sushi, yakitori, and cocktails.

Meanwhile, Nashville’s Hutton Hotel has welcomed Evelyn’s, a restaurant and bar serving pasta, fish, steaks and plenty of whiskey.
