Yield: 40 servings.

l gallon 1 quart cooked long grain white or brown rice
1 #10 can Dole® Tropical Fruit Salad, drained
3 cucumbers, chopped
1 Dole red, yellow or green bell pepper, finely chopped
1 3/4 cups Dole green onions, chopped
1 Tbsp. grated lemon peel
3 1/2 cups fat-free or light Italian salad dressing, prepared

Combine rice, tropical fruit salad, cucumbers, bell pepper, green onions and lemon peel in large bowl. Pour dressing over salad. Toss to coat evenly.
