INGREDIENTS:4 lbs. halibut, small dice
2 bunches cilantro, chopped
2 red onions, small dice
2 roasted poblano peppers, cleaned and diced
2 mangos, diced
2 papayas, diced
2 avocados, diced
1 ½ cups freshly squeezed lime juice
3 cups freshly squeezed orange juice
2 Tbsp. Kikkoman soy sauce DIRECTIONS:Place fish in mixing bowl. Add all ingredients. Cover and refrigerate overnight. For plantain chips: Slice green plantains thin, and fry them. Add salt to taste.SERVINGS:24 servingsFrom:Chef Maria Manso, Asia de Cuba, San Francisco
