Soy Ginger Sauce for Marinated Crab Claws

From: Chef Frank Stitt, Highlands Bar & Grill, Birmingham, AL. Yield: 4 cups.

3 cups mayonnaise
¼ cup honey
¼ cup naturally brewed soy sauce
3 Tbsp. ginger juice*
2 Tbsp. lemon juice
2 Tbsp. lime juice
as needed, hot sauce
as needed, hot pepper

For soy ginger sauce: In mixing bowl, whisk together mayonnaise, honey, soy sauce, ginger juice, lemon juice and lime juice. Season with hot sauce and pepper and add more lime juice or soy sauce to taste.  Serve with fresh blue crab claws that have been tossed with lime juice, parsley, olive oil salt and pepper.

*To make ginger juice, peel and grate a 4 oz. piece of fresh ginger; press grated ginger in a small strainer to express juice.
