Seven-Rice Tabbouleh Salad with Green Lentils, Fava Beans and Tomatoes

Yield: 12 servings.

3 cups cooked gourmet 7-rice blend
1 cup cooked green lentils
6 cups finely chopped flat-leaf parsley
1 cup chopped scallion
6 cups seeded and chopped tomatoes
1 cup blanched and peeled fava beans
2 cups chopped mint
1 cup fresh lemon juice
1 cup extra virgin olive oil
to taste, kosher salt and freshly ground black pepper
12 romaine leaves, clean

Toss rice and lentils in a bowl. Add parsley, scallions, tomatoes, fava beans and mint. Toss to combine.
Mix the lemon juice and olive oil in a separate bowl. Season with salt and pepper. Toss with rice mixture and garnish with romaine leaves.
