Yield: 6 servings.
1 Tbsp. butter
1 Tbsp. flour
1 cup milk
6 oz. fully cooked pork sausage patties, browned and crumbled
5 large eggs
1 lb. pizza dough
1 cup frozen hash brown potatoes
1 cup cheddar cheese, shredded
as needed, sliced scallions
Place pizza stone in oven and preheat to 450°F for at least 30 minutes. In medium skillet, melt butter. Whisk in flour and cook for 1 minute. Slowly add milk and cook, stirring often, until thickened. Season with salt and pepper, then add crumbled sausage and remove from heat.
In medium-sized bowl, beat eggs. Spray separate skillet with nonstick cooking spray and add eggs. Stirring frequently, scramble the eggs to desired doneness.
Roll out pizza dough on floured surface. Top with sausage gray, followed by hash browns, scrambled eggs and cheese. Bake according to pizza dough directions. Sprinkle finished pizza with scallions.
