8 half-inch slices of three-cheese semolina bread
8 thick slices of Swiss cheese
4 Tbsp. pesto
8 thin slices turkey
2 Tbsp. softened butter
Arrange slices of bread on flat surface in 2 rows of 4. Butter each slice of bread on one side, then lay out the bread, butter-side down. Evenly spread 1 Tbsp. pesto on each slice and top with 1 piece of cheese. Add 2 slices of turkey on each slice and top with remaining slices of cheese.
Heat a large nonstick pan or griddle over medium-high heat for 2 minutes. Put as many sandwiches as will fit in the pan or on griddle without crowding. Cover and cook until cheese has just begun to melt and bread is golden brown.
Turn sandwiches, pressing each firmly with spatula to flatten slightly. Cook sandwiches uncovered until bottom is golden brown, about 1 minute.
