INGREDIENTS:1 cup vegetable oil
1 lb. smoked sausage
1 ½ cups all-purpose flour
1 quart onions, chopped
1 quart green bell peppers, chopped
1 quart celery, chopped
1 lb. shrimp, peeled
1 tsp. basil
1 tsp. oregano
2 bay leaves, crumbled
1 gallon seafood stock
1 quart tomato sauce
1 tsp. Tabasco brand pepper sauce
4 oz. seafood base in 1 gallon Major Peters Bloody Mary MixDIRECTIONS:In a little oil, brown sausage. Remove from pan and set aside. Steam onions, peppers and celery until tender, adding more oil as needed. Remove from pan and set aside. Add the rest of oil and heat. Whisk while adding flour, until smooth and light brown. Add remaining ingredients, sausage and vegetables. Simmer for 1 hour.
