Guacamole Chicken Skewers

Yield: 6 appetizer servings.

2 California avocados, ripe
1 clove garlic
1 lime, juice only
2 shallots
1/2 tsp. TabascoÆ brand Green Pepper Sauce
1/4 cup chicken broth
6 chicken breasts, boneless, sliced and threaded onto skewers
to taste, salt and pepper

For Guacamole Sauce: Combine all ingredients except the chicken breast and blend until smooth. Season with salt and pepper and reserve.

For Chicken Skewers: Grill or broil the chicken for 2-3 minutes on each side, or until cooked through. Serve with guacmole sauce in a bowl for dipping.
