Grilled Indonesian Yakitori Sticks

INGREDIENTS:1 filet of fish—snapper, grouper or tuna
12 wooden or metal skewers

Marinade:
1 cup pineapple juice
1 ounce soy sauce
½ tsp. ground ginger
½ tsp. red pepper flakes

Peanut Sauce Topping:
½ cup chunky-style peanut butter
1 ½ Tbsp. soy sauce
1 Tbsp. water
½ tsp. sugar
2 drops Tabasco brand pepper sauce
1 clove garlic, minced
½ cup water DIRECTIONS:Slice filet of fish into thin strips. Weave thin strips of fish onto skewer, as if sewing with a needle. Marinate fish strips for 1-2 hours in marinade. Grill marinated yakitori sticks for about 3 to 5 minutes per side. Then add peanut sauce topping.

To make peanut sauce topping: Thoroughly combine first 6 sauce ingredients. Slowly stir in the ½ cup water, mixing until smooth. Makes about 1 cup of topping for yakitori sticks.
