Georgia Pecan Power Bars

Yield: 12 3"x2" bars.

1 large egg
3/4 cup honey
1/4 cup canola oil
1 tsp. vanilla extract
1 cup grated carrots
1 cup chopped pitted prunes
1/2 cup chopped pecans
1 cup whole wheat flour
1 cup instant oats
1/2 tsp. baking soda
1/2 tsp. salt
1/8 tsp. allspice (optional)

Heat oven to 350°F. Grease a 9" square baking dish. In large bowl, beat together egg, honey, oil and vanilla until blended. Stir in carrot, prunes and pecans. In medium bowl, combine whole wheat flour, oats, baking soda, salt and allspice. Stir into honey mixture until well-combined. Spread evenly in pan and bake 20 minutes, or until toothpick inserted in center comes out clean. Cool before serving.
