INGREDIENTS:5 Tbsps. low-fat or nonfat plain yogurt
2 ½ cups natural apple sauce
2 ½ Tbsps. chipolte peppers, puréed
3 cups cooked plain rice
4 ½ cups diced apples
4 Tbsps. green onion, chopped
12 flour tortillas
24 oz. grilled chicken breast, sliced
3 cups low-fat cheddar cheese, shreddedDIRECTIONS:1. To make sauce: Combine yogurt, applesauce and chipoltes; cover and refrigerate until needed.
2. For filling: Combine rice, apples, green onions. Cover and refrigerate until needed.
3. For each serving: Grill one tortilla on one side. Spread un-grilled side with 2 ½ oz. of rice mix, top with 2 oz. of chicken, 2 oz. of sauce and 1 oz. of cheese. Roll tightly; microwave on high for 1 ½ minutes.
