Doraku Fresh Ginger Ale

From: Executive chef Hiroyuki Terada, Doraku, Miami Beach, FL.

Yield: 1 serving.

1 /4 oz. ginger, pounded
2 liters water
10 oz. brown sugar
8 oz. gingerale
2 oz. soda water

Boil water and ginger for 45 minutes. Add sugar when finished boiling. Mix with ginger ale and soda water. Garnish with fresh mint and a sugar cane stick.

Lemon Cream Soda

From: Drinks for All Ages: The Original Guide to Alcohol-Free Beverages and Drinks by Robert Plotkin (BarMedia, Tucson).

Yield: 1 serving.

1 oz. lemon syrup
1 /2 oz. vanilla syrup
3 /4 oz. half & half cream
as needed for fill, club soda
for garnish, lemon wheel

In a house specialty glass, build drink by adding lemon syrup, vanilla syrup, half & half cream, and filling with club soda. Garnish with lemon wheel.

Egg Cream Revisited

This is an update of the classic soda fountain speciality that's been around since the 1930s.

as needed, ice
3 oz. whole milk
2 oz. whipped cream
2 oz. chocolate syrup
as needed for fill, club soda
for garnish, whipped cream
for garnish, drizzle of chocolate syrup

Into a house specialty glass with ice, pour whole milk, whipped cream and chocolate syrup. Shake and strain. Fill with club soda. Garnish with whipped cream and a drizzle of chocolate syrup.
