INGREDIENTS:1 2-3 lb. chicken, cut into pieces
½ cup olive oil
2 cloves sliced garlic
½ cup Marsala wine
½ lemon
1 Tbsp. oregano
1 Tsp. chopped parlsey
Salt and pepper to taste
2-3 potatoesDIRECTIONS:In a large skillet brown chicken pieces in ½ cup olive oil. remove the pieces from the skillet and place a single layer of them in a large casserole dish. Drain all but 2 Tbs. oil from the skillet, add garlic and saute for about one minute, until just starting to brown, but do not burn. Stir in Marsala wine, lemon juice, oregano and chopped parsley. Salt and pepper to taste. Reduce for one minute and pour sauce over chicken. Bake at 325°F for 45 minutes, turning the chicken pieces once during the cooking process. While baking the chicken, saute sliced potatoes in olive oil until crisp and tender. When the chicken is finished cooking, remove the casserole from the oven and place fried potatoes around the rim to imitate the cone of a volcano.SERVINGS:
