Brazilian Sausage Sandwich

Yield: 8 sandwiches

2 Tbsp. olive oil
2 medium onions, thinly sliced
1 green pepper, thinly sliced
1 tsp. ground cumin
¼ tsp. red pepper flakes
3 large tomatoes, seeds removed and diced
¾ cup strong brewed coffee
8 fully cooked smoked sausages
1½ cups partially thawed frozen pineapple cubes
8 French bread or hoagie rolls
to taste, salt

Heat olive oil in large skillet or sauce pot; sauté onion, green pepper, cumin and red pepper flakes for 5 minutes, or until onion begins to caramelize.

Add chopped tomatoes, coffee and salt; simmer for 10 minutes. Add sausage and pineapple cubes. Simmer 5 minutes longer, or until sausage is heated through. Meanwhile, heat the rolls.

Serve sausage in rolls, spooning tomato and pineapple mixture over.
