INGREDIENTS:1 lb. all-purpose flour
5 oz. soy flour
6 oz. granulated sugar
2 Tbsps 1 ½ tsp. baking powder
2 ½ tsps. ground cinnamon
3/4 tsp. ground nutmeg
¼ tsp. salt
1 ¼ cups soy milk
1 ¼ cups water
2 Tbsps. 1 ½ tsps. soybean oil
11 oz. pineapple, crushed, canned
5 oz. dried apricots, dicedDIRECTIONS:1. Preheat oven to 400°F. Combine flours, sugar, baking powder, spices and salt; mix well.
2. Make a well in center of dry ingredient mixture and add eggs, soy milk, water, oil, pineapple and apricots; mix only until moistened.
3. Spoon mixture into oiled muffin tins.
4. Bake for 12-15 minutes, or until wooden pick inserted near center comes out clean.
