Maitake mushrooms, also called “hen of the woods,” are known for their meaty texture. The mushrooms grow in clusters at the base of trees, and at restaurants are found mostly on fine-dining menus. These mushrooms are best known among Asian consumers and have seen 116-percent menu growth in the past four years.
