Two bar concepts in one space share an artisan ‘ice lab’

At Rose & Thorn in Denver, ice is taken very seriously.

In fact, the restaurant and bar in lower downtown Denver by the husband-and-wife team Shawn and Alex Ellis has an ice laboratory, in which water and various other things are infused with spices, flowers and fruits and flash frozen, adding another layer of flavor to both alcoholic and non-alcoholic beverages.

It’s actually two concepts in one. Upstairs, the restaurant offers international street food dishes and the bar focuses on tequilas and mezcal.

Downstairs a second concept called the Double Barrel Club, is a 1950s-style, dark-and-moody Cuban- speakeasy, with a heavy emphasis on rum drinks.
