For the Chef Power List this year, we went looking for independent chefs that are pushing boundaries and bringing new ideas to the U.S. — whether by introducing a lesser-known cuisine or ingredient, or by thinking about their businesses in an all-new way.

Innovation has become the default mode for many during the pandemic. But these chefs are examples of innovators who are forging a new path. They serve as ambassadors of sorts, bringing in fresh culinary ideas.

After a year of clinging to comfort foods, consumers are likely to come out of their COVID caves looking for something new and different. These chefs are ready.
