Winner: Open-Faced Pork Schnitzel Sandwich

Inspiration: “We were designing a brunch menu and I thought our schnitzel on the dinner menu would make an awesome sandwich. I also considered what a grand impression an open-faced sandwich would make. From there is was just about plugging in all of the condiments and add-ons that make this sandwich so special.”

Key Ingredients: Horseradish cream, house-fermented sauerkraut, caramelized onion spread, Emmentaler cheese, a fried egg, pickled dill, house-made mustard and grilled light rye bread.

Price: $19

Food Cost: $4.37

What the Judges Said: It would have been so easy for Papadopoulous to grab the pork schnitzel from the dinner menu, plop it atop some bread and call it a day. But he clearly sat down and mapped out the types of ingredients that would take a delicious slab of breaded pork and make it exceptional. It’s a virtuoso balancing act that blew us away.
