Inspiration: “I wanted to take something that was a staple on a Seattle menu and turn it into a great sandwich. I also thought it would be fun to challenge myself to come up with a sandwich that is based on such an iconic dish in this region.”
Key Ingredients: Crispy Alaskan cod, vegetable pickle relish, lemon aioli and crispy parsnips

What the Judges Said: This is a fantastic fish sandwich. The batter couldn’t be more perfect: light and crispy without concealing the flavor of the fluffy white cod within. The pickled relish and lemon aioli provide a nice acidic counterpoint to the richness of the fried fish, while the parsnips are a clever stand-in for fried shoestring potatoes.
